| GRANDMA'S SOUTHERN CORN BREAD 2 c corn meal 1 egg 3/4 t. soda 11/2 - 2 c. buttermilk 3/4 t. salt 1 T. fat Sift dry ingredients together. Combine eggs, milk, and melted fat. Add to the dry ingredients all at once. Stir just enough to moisten and give the mixture a rough appearance. Fill muffin tins or pan, Bake in hot oven (400 degrees F.) for 25 minutes. GRANDMA'S CORN BREAD PONS (Use above recipe and drop from a spoon and fry in an iron skillet! Ummmmmm! OLD FASHIONED SOUTHERN CAT HEAD BISCUITS 2 c sifted all-purpose flour 1 t. salt 3 t. baking powder 1/3 c. fat (Wesson oil will do) 2/3 c buttermilk Heat oven to 475 degrees, sift together flour, baking powder and salt. Mix fat and milk into one measuring cup (but don't stir). Then pour all at once into flour. Stir with a fork until mixture clears side of bowl and rounds up into a ball. Powder hands, and pinch some dough to roll in hands, roll to less than the size of a cat's head, because they will grow when baked. Place in frying pan or cookie sheet and bake for 10 - 15 minutes, just till they are turning brown, then slather with butter and stick back in the oven for about a minute. Serve hot, slice open and fill with butter! Good with syrup or gravy. |
| DUMPLIN DOUGH 1/2 c. shortening 1/2 t. salt 1/2 c. water 3 c. plain flour Mix liquid and salt, then work in flour. The dough should be real stiff. Cover dough with flour; set aside for at least 2 hrs. (4 hrs. would be better) before trying to roll. This is the secret to rolling it real thin. Then sprinkle rolling cloth with flour and roll dough as thin as paper. Cut into small pieces and drop a few pieces at a time into boiling chicken broth. This is also a good recipe for pastry. |
| BOILED PEANUTS Select and wash young, green peanuts in the shell. Add 1 tablespoon salt to each quart of water, and boil peanuts for 2 1/2 - 3 hours. |
| OLD TIMEY VINEGAR PIE 1/2 c margarine, melted and cooled. 1 1/2 c. sugar 2 T. flour 1 T. vanilla 2 T. vinegar 3 eggs 1 (9") pie shell Combine first 6 ingredients, Pour into pie shell. Bake at 300 degrees for 45 minutes. |
| GREENS 1 large mess of greens 1/4 pound salt pork, slicked or diced 1 cup water Check leaves carefully, remove pulpy stems, and discolored spots on leaves. Wash thoroughly in several changes of warm water; add a little salt to the last water. Put greens into a colander to drain. Put greens and salt pork in large pot; add water and cook slowly until greens are tender. Add additional water and salt, if needed. Serve with hot pepper sauce and cornbread. |
| MOTHER'S BANANA PUDDIN 1 c sugar vanilla wafers 3 T. flour 3 egg whites 3 egg yolks 3 T. sugar 3 c. milk 1/4 t. cream bananas of tarter |
| Mix sugar, flour, egg yolks, and milk. Cook over medium heat until thick. Slice bananas in bottom of 2 quart baking dish. Add layer of wafers. Pour half of pudding mixture over this. Add another layer of bananas and wafers. Pour remainder of mixture over this. Top with meringue made with egg whites, sugar, and cream of tarter. Spread over pudding, bake 12 minutes at 350 degrees until lightly brown. |

Eat grits everyday for breakfast. Every Southerner knows tomatoes with eggs, bacon, grits, and coffee are perfectly wonderful; that red eye gravy is also a breakfast food; and that fried green tomatoes are not a breakfast food. |
